“My team of Chefs and I carefully research our recipes from documented medieval texts. We then blend all our freshly-sourced producewith indigenous herbs and also spices that would have come to Estonia by way of the Hanseatic League’s trade routes from the Far East.”
Executive Chef – Emmanuel Wille who has 35 years of experience including with a Michelin Starred Restaurant
In the Middle Ages, the feast did not mean just filling your stomach, but the main reason for meeting over a meal was either for peace-making, marriage-settlement, making contracts or many other deals. All kinds of comedians, musicians and actors were involved. Olde Hansa was the center point for commerce and business, merriment, and relaxation for the weary travelers and local merchants.
THE SPICE MERCHANTS DAUGHTER FROM THE FAR EAST …………………………
The Rich Merchant has welcomed – from the Far East – a fellow merchant specialising in the trade of exotic spices. In return for our Rich Merchant’s hospitality, the Spice Trader has allowed his eldest daughter to perform traditional, mystical eastern dances – demonstrating her elegant art of movement whilst balancing flame and then sword. For the duration of our Far Eastern guests, the Spice Trader’s daughter will entertain each Sunday, Tuesday, Wednesday and Thursday evenings.

7 x Appetisers including cheese, herb bread with nuts and rye bread with ham, pickles
2 x Main courses with side dishes & vegetables

In the Middle Ages, only monks knew the art of distilling strong alcohol. It was not for nothing that this liquid was called Aqva Vitae because it was mainly used for the treatment of illnesses, not for getting drunk. In our establishment, strong spirits are made by an old monk, who can occasionally be seen wearing the monk’s habit.
Our Aqva Vitae – of flavoured vodka – is a traditional drink much favoured by everybody. It should be no surprise we have created our very own range of ‘aquavit’ as it is more commonly known in the northern parts of Europe:
– Healing drops with pepper
– Aquavitae with caraway seed
– Wild Forrest-Berry schnapps
